Chickpea and Brown Rice Veggie Burgers
Ingredients:

2 cups cooked and drained chickpeas

1 cup cooked brown rice
-
2 shallots, minced
-
3 cloves of garlic, minced
-
2 tablespoons (approx.) chopped fresh parsley
-
Sea salt and coarse ground pepper
-
2 large eggs
-
Olive oil (for pan)
Toppings:
-
Mustard or whole grain mustard
-
Fresh spinach or lettuce leaves
-
Sliced tomato
-
Sliced red onion
-
Melted Daiya mozzarella cheese (optional)
Directions:

Mash cooked chickpeas and brown rice until they form a thick paste. Stir in shallot, garlic, parsley, salt and pepper. Then stir in egg. Form into patties.

Heat olive oil in a large skillet over medium-high heat. Add patties and cook until golden brown on both sides. Add toppings and serve!
