Chickpea and Brown Rice Veggie Burgers

 

 

Ingredients:

 

  • 2 cups cooked and drained chickpeas

  • 1 cup cooked brown rice

  • 2 shallots, minced

  • 3 cloves of garlic, minced

  • 2 tablespoons (approx.) chopped fresh parsley

  • Sea salt and coarse ground pepper

  • 2 large eggs

  • Olive oil (for pan)

 

Toppings:

 

  • Mustard or whole grain mustard

  • Fresh spinach or lettuce leaves

  • Sliced tomato

  • Sliced red onion

  • Melted Daiya mozzarella cheese (optional)

 

Directions:

 

  • Mash cooked chickpeas and brown rice until they form a thick paste. Stir in shallot, garlic, parsley, salt and pepper. Then stir in egg. Form into patties.

 

  • Heat olive oil in a large skillet over medium-high heat. Add patties and cook until golden brown on both sides. Add toppings and serve!
