Super Veggie Salad

 

Ingredients

 

  • 1 cup spinach leaves

  • 3 small tomatoes, diced

  • 1/2 cup fresh broccoli florets

  • 1/4 cup diced cucumber

  • 2 carrots, julienned

  • 1/4 cup diced celery

  • 1 small diced green or red bell pepper

  • 1 red onion, thinly sliced

  • Dressing of your choice

 

Directions

  • In a serving bowl, combine the first 10 ingredients. Drizzle with

  • dressing and toss to coat. Yield: 2 servings.

 

Notes

  • I like to make a healthy dressing using olive or flax oil, a little mustard or Veganaise, garlic and lemon juice. There are many other healthy alternatives to choose from though.
