Super Veggie Salad
Ingredients

1 cup spinach leaves

3 small tomatoes, diced

1/2 cup fresh broccoli florets

1/4 cup diced cucumber

2 carrots, julienned

1/4 cup diced celery

1 small diced green or red bell pepper

1 red onion, thinly sliced

Dressing of your choice
Directions

In a serving bowl, combine the first 10 ingredients. Drizzle with

dressing and toss to coat. Yield: 2 servings.
Notes

I like to make a healthy dressing using olive or flax oil, a little mustard or Veganaise, garlic and lemon juice. There are many other healthy alternatives to choose from though.
